Need some advice guys. Will front fenders from a 73 Electra 225 4 door
interchange on my 73 Centurion convertible?

Yes...just be sure you have the correct fenders in regards to the cornering lamp option.

Do I take that to mean that I must find the correct fender (without the cornering light) because Centurion's don't have them?
If that is the only option, would electra fenders with cornering lights still fit... knowing it would be the incorrect application?

If your car has cornering lights it would be a shame to put on fenders without that option. Cutting the fenders to install lights requires a fairly precise cut.
If your car doesn't have cornering lights but the fenders do it's a surprisingly complex process to add the option. The biggest hurdle is the turn signal switch that's buried in the steering column. It is different for cars with the cornering lights. Also some cars don't have the necessary wiring between the switch and the lights. You could weld in patch panels, but if you could do that you'd probably just fix the rust on your panels.
Either fender will fit fine, it's just a whole bunch easier if you get panels similar to what's already on the car.
