I have found a set of Keystone Klassic rims for sale on ebay;
15 x 7, 5 lug, 5 1/2 bolt pattern, 4 inch offset Ford Pickup Keystone Klassic Wheels
Do anyone know if these would fit on a 73 centurion? Usually Keystone rims have a flexible lugnut holes but not these ones..

Nope those won't fit.
The Keystones you are thinking of have what they called the "uni-lug" system. It was an oval shaped hole in the rim and a matching oval shaped washer that fit under the lug nuts. The washers were available with the hole centered or off set.
To fit Keystones on a Centurion you need the uni-lug along with the offset washers (which can be a bear to find).
I have gold centered Keystones with the uni-lug set up. It works fine, as long as you remember to re-torque the lug nuts after 50-100 miles. If you don't you'll start to snap off wheel studs. Since the rim doesn't ride on the wheel hub the shaft of the wheel stud has to support the weight and clamp the rim in place.
If I were going to buy rims I would try to find a rim that is "hub-centric" which means is fits the wheel hub ensuring the rim is exactly centered. This lets the hub carry the weight and the lug nuts just keep the rim in place.
